Any recommendations on a plant to tie/attach to the driftwood that's sticking out of the water?
I'd like it partially submerged if possible.
Cool leaves or flowers a plus
Anubias would be the default. I have a nana that I can split and tie.
Java fern and anubias are obvious candidates, as are lilies, but hygrophila pinnatifida might be interesting as well. Don't know what the flowers look like, though pics should be available online.
There aren't many plants that you couldn't put there. Many stems are marsh plants that grow emerged normally, swords and crypts would adapt easily, hair grasses would work, HC would even grow there.
Vals are a no, lily's are also a poor idea. Blyxa probably not, but that is a guess.

Aquascape? I'm a crypt farmer.
If you've got bait, I've got wasabi!
I wish I could be like Mr. Sarcastic when I grow up!
Java fern with thin leaves would look great as well - The only caveat is my experience with it was that it makes loooooots of babies. I spent half the time 'scaping and half the time pulling little ones out of everything in my previous tank
I will do an anubias - Is there a variety that has spotted leaves or am I thinking of a crypt?
